Ken®ʼs Favorite Fudge

INGRIEDENTS: 

1 1/2 cups diced marshmallows

1/3 cup evaporated milk

1 2/3 cups sugar 1⁄2 teaspoon salt

1 1/2 cups semi-sweet chocolate bits

1 teaspoon vanilla 1/2 cup nuts, chopped butter for greasing pan

1 9-inch square pan or waxed paper

 

ABOVE:  Making Ken's favorite fudge.

Prepare pan by lightly buttering the bottom and sides.

Dice marshmallows with a knife, or cut into small pieces with scissors; set them aside.

Mix the evaporated milk, sugar and salt in a saucepan over low heat. Heat the mixture until it just boils, then cook it for 5 minutes, stirring constantly with a wooden spoon. Remove from heat.

Add marshmallows, chocolate bits, vanilla and chopped nuts. Stir until the marshmallows melt (about 1 or 2 minutes).  Pour into buttered pan; cool.

Or, to make fudge bonbons, spoon the fudge into drops on waxed paper. Makes about 2 pounds of tempting candy.
